Square #8 Minecraft Birthday Cake

Square #8 Minecraft Birthday Cake

This order started out as cupcakes with minecraft decorations but turned into a square #8 birthday cake and because the customer ordered strawberry/banana, it doesn't have the usual square minecraft look inside or crushed oreo cookies on the outside.

I baked 2 8-inch square cakes, cut a square out of the center of each cake and trimed off a little of the ends that would be touching. Next time I will trim a little more to make it easier to frost between the two ends. I also trimmed the top cake all the way around to make it a little smaller than the bottom of the 8.



I iced the cake with vanilla buttercream tinted light green and used mashhmallow fondant to make Steve, creeper, tnt, pig and lettering.

The Happy Birthday was made with the new tappit I ordered from Craftsy! I love the cutter but it is a little more work than other tappits and easier at the same time :)

Happy Birthday to my Favorite Sister!

My little sister turned 65 this month, I couldn't not bake her a cake besides, she pre-ordered it :)

A few weeks prior to the big day she said "I want a 3-layer chocolate cake witth suzy-q filling!" The cake didn't have to be decorated but I couldn't not do that either :) and I had leftover marshmallow fondant.



Two Tier 65th Anniversary Cake



The bottom cake is french vanilla, iced with vanilla buttercream, the top cake is a spice cake, iced with cream cheese buttercream. Both are covereed with marshmallow fondant, recipe here www.cakecentral.com/recipe/16228/buttercream-flavored-marshmallow-fondant, flowers, confetti and letters are also MMF. Also, both cakes are 2 layers, I hate when I have to guess how many layers a cake is if I'm thinking of making something like it.



If you haven't tried Cake Central's MMF, you should! The addition of butter flavor and Dream Whip give it great flavor. No one at the party was peeling off the fondant to throw away and a few guests asked if it was fondant!

Teacher Bithday Cake


Another dark chocolate fudge cake with suzy-q filling and butterecream icing. The pencils, books, chalk board and paperclips are modeling chocolate, the lettering and eraser are marshmallow fondant. The apple is a cupcake, yes, filled with suzy-q, and covered with marhmallow fondant. The "teachers rule" ribbon I picked up at Joann Fabrics.

I found the best recipe for marshmallow fondant, it's easy and delicious, yes, I said delicious!! I had some floweres I wasn't happy with, I broke them up into pieces and I've been eating them ever since, yum! I will post the recipe or a link to it later.

Cupcake Bouquet

I did my first cupcake bouquet last week and it turned out ok, not great. Next time I will use mini cupcakes in addition to regular size to fill in the gaps. Also, I will place the bottom row of toothpics angled up slightly, I thought the bottom row of my bouquet looked like it was going to fall off.

I piped the frosting on after placing the cupcakes on the ball next time I will pipe first, refrigerate for 20 - 30 minutes then place on the styrofoam ball.

I picked the vase up at Joann Fabrics, on sale, and got 40% off the styrofoam ball. The vase has a 5 or 6 inch opening and the ball was the same size. I made sure the ball would sit down in the opening of the vase a little before I purchased it.

The ball held 14 cupcakes. I used regular toothpicks but will be on the lookout for longer ones in the future and, as stated above, will add maybe a half dozen minis.

Doctored Vanilla Cake Mix

Doctored Vanilla Cake Mix Cupcakes by Lovefromtheoven


INGREDIENTS
1 box vanilla cake mix (white or yellow cake mix can also be used)
1 cup sugar
1 cup all purpose flour
1 cup water
3 eggs
1 tsp pure vanilla extract
The seeds from one vanilla bean (optional) or another tsp vanilla
1 cup sour cream
DIRECTIONS
Heat oven to 325 degrees F.  Line cupcake pans with 24 cupcake liners.  Did you know that you can get cupcake pans that hold 24 standard size cupcakes?  Love these pans! I have 6 of them!!
In a large mixing bowl, combine cake mix, sugar and flour.  Mix to combine.  Add in water, eggs, vanilla extract, vanilla bean seeds and sour cream to the dry ingredients and mix well using an electric mixer.  Mix for approximately two minutes.
Scoop cupcake batter into cupcake liners.  I like to use an ice cream scoop to scoop my batter.   Batter should fill the cupcake liners about 2/3 of the way full.  Place cupcakes in oven to bake for 15-20 minutes or until center springs back when lightly touched and a toothpick inserted into the center comes out clean.  Allow to cool completely on cooling racks.  
Once cooled completely, frost with your favorite frosting recipe.  Here is one that I like to use.
VANILLA BUTTERCREAM FROSTING
1 cup butter, softened (not margarine!)
3 1/2 cups powdered sugar
2 tsp vanilla extract
1 tsp whipping cream or more if needed (you can also use milk or half and half)
Pinch of salt
Seeds from one vanilla bean (optional)
In a mixing bowl, beat butter until light and fluffy.  Mix in sugar and salt, blending well.  Add in vanilla extract and whipping cream, and mix on medium for approximately two minutes.  Fold in vanilla bean seeds and mix to combine.  Use to frost your cupcakes.  

Suzy-q Filling

I have been meaning to do this for weeks, actually months, but something always comes up, a cake, cupcakes or I just get sidetracked. I really am going to try and post more this year :) wish me luck!

Ingredients:

1 cup heavy cream or half and half
5 TBS all purpose flour
1 cup salted butter (room temp)
1 cup granulated sugar (bakers super fine sugar works best but any granulated will do)
2 tsp pure vanilla extract

A stand mixer works best for this; add room temp butter and sugar to bowl of stand mixer and beat on medium for 5 minutes then add vanilla.





While your sugar and butter are mixing 

whisk heavy cream and flour in a sauce 
pan over low heat (I set my electric burner to 4) 
continue to whisk until it thickens, when you can 
see the lines left by the whisk remove from heat 
but continue to whisk.




After letting it set a few minutes, I place the pan in the frig pulling it out every few minutes to whisk again. Once it has cooled, bottom of sauce pan will no longer be warm, I add it to the butter sugar mixture and beat until light and fluffy.

If using half and half or whole milk you will probably need to switch your stand mixers paddle attachment to the whisk (put the whisk in the freezer for a few seconds before using).

This recipe should make enough to fill 2 dz or more cupcakes. I have filled a 3 layer cake and 24 cupcakes with this.

This filling doesn't refrigerate well as it tends to deflate and look a little watery when you try beating again. If I'm going to use leftover filling the next day or so I place it downstairs on top of my chest freezer. Store the filling in a Tupperware type covered container.

Dark chocoate fudge cake or cupcakes with suzy-q filling are my most requested sweet.
